The resulting wine shows a lively red colour with hints of purple highlighting the edges

then pressed and left to a wild ferment in both 1000 L oak barrels (fuder) and stainless-steel tanks

Pillot employed 25% whole bunches this year and the result is something pretty special

The Sweet Vermouth is made with cabernet fromCentral Victoria. Grapefruit, mace and angelicaroot all feature. Inspired by the classic Negroni,the Sweet is an ideal element for a white spiritcocktail, or perfect pairing with soda or cider.
